My Publix has stopped carrying Amy's Kitchen veggie burgers. I loved them: they were Vegan, nutritious and delicious. I could go back to my kosher veggie patties but they don't really have enough protein to them.

Does anyone have any suggestions for replacements? I would rather it be something else Publix would carry...

Anyone have any feelings on tofu?

Those are sooo good. The Whole Foods by my house sells them, but not sure how close you are to one.

Well, let's see, I have my choice of 45 miles away in Tampa or 73 miles away in Orlando...

I have been to Whole Foods a couple of times and it is quite nice. They even have a variety of Silk yogurts that no one else except Disney seems to carry.

Amy's are the best. Boca and Morning Star do make vegan and high-protein veggie burgers. Check them out.

I thought I had looked at all of them for a Vegan one but I looked again on your recommendation and did find the Savory Mushroom Mozzarella Veggie burger. It was the only variety by Boca or Morning Star without eggs.

My mom and I don't eat eggs unless we know the company tries to be humane about getting them.

I am also a vegan (or as vegan as I possibly can be, as in, when I'm making my own food, but I am a strict vegetarian). And that's funny, because last time I went to the store, I was surprised and found like three or four Boca and Morning Star veggie burgers that said vegan right on the package (and was supported by their ingredients lists). But, of course, I was shopping at our coop, which has a bigger selection and caters to vegans/vegetarians and other restricted diets. I have to shop at the coop because it is the only store within an hour's drive around me that sells "fake meat" products that are vegan. I go in there and fill my whole cart with Health is Wealth products (which have a great vegan line of "fake chicken"). My coop also has everything Amy's makes. Unfortunately, my coop is far away and expensive, so I know too well the grochery shopping trials and tribulations of vegans! Good luck!

I love tofu. I don't eat veggieburgers, but tofu is awesome. I dunno if you're asking about tofu recipes or using tifu as a burger substitute. Do you need tofu recipes?

We use Boca primarily...we're lucky to have a wide variety here of vegetarian/vegan products to choose from. Don't have a Publix, but have you asked them to reconsider carrying your favs? Wal-Mart also carries Amy's products usually.

Tofu! I have a vegetarian daughter so I've learned to wield tofu in several different ways. My fav is to get the firm, and put it between plates with paper towels and put something on top to squeeeeze the living daylights out of it to get rid of all the water. You can then slice it and fry it up in olive oil--a long process, as it takes awhile but it is worth the patience (and now it doesn't seem to take long at all). Since it picks up the flavors of your sauces, experimenting with different sauces and veggies is fun. We do lots of stir-fry. I prefer the tofu in liquid to the shelf-ready boxed, hands down, and always have a tub of firm ready in the fridge.

Also...to alter the texture a bit, you can squeeze out the tofu and then freeze it, then rethaw it. That makes it denser.

Our newest favorite recipe is spinach lasagna, with silken tofu smooshed up with spinach as the ricotta. It is delicious (though I am not a fan of vegan cheese).

There are lots of good recipe sites out on the net. I have never made my own burgers because they are so available from Boca and Morning Star. (I do love the chik'n burgers lots--more than the veggie burgers).

Not a vegetarian, but semi-live as one. :)

The real expert vegetarian is [livejournal.com profile] dremiel. She and her family have lived as vegetarians forever, and she makes the best things for her son's lunches! She's my go-to person for questions (and is awesome). The lasagna recipe was one she shared, made in cupcake tins with won ton wrappers! Very fun and good. :)

I wonder how hard it is to make burgers? I am curious now! Hmmmm...

They have suggested specially ordering products but I hate the thought of all that special effort for me. Plus, now that they've gotten rid of least four of my regular grocery items...we're really just considering changing stores.

We don't do Wal-Mart unless there is no other possible option and even then, it can sometimes feel dirty.

Thanks so much for the help. I happen to love vegan cheese especially the shredded kind. Public used to have a salad that was just lettuce, tomatoes, peppers and soy shredded cheese.

I don't go to the WalMart near me if I can avoid it but the one in the, uh, richer area...it is a good one. Loving having Sprouts though--they carry everything which is nice!

I like the cheese okay in the lasagna--just not by itself but maybe that is not so unusual? :)

I do wish we had a Publix though! I've liked the ones I've been in in other states. Ah well... Sigh.

If they were extremely easy...I'm a total newbie at cooking. However, I did find some awesome looking tofu kielbasa so I think that's a definite option for what I'm looking for.

My favorite tofu recipe is Dragon Tofu (http://www.food.com/recipe/dragon-tofu-155184). It's not that hard to make!

And you can also make firm tofu firmer by pressing it. take it out and set it on a paper towel lined plate, then set another plate on top and something relatively heavy. Then just let it sit for a little while and tofu becomes even firmer! This might be good if you are looking to make veggie burgers with tofu.

I like the Bahama Rice Burgers.
They are Vegan. But also soy and wheat free. That is a big bonus for me as I had to give up my vegetarianism because I was beginning to develop a sensitivity to soy.

I prefer them crumbled, but they are pretty good as a burger. They're definitely not bland.
And I get mine at Publix.
And they're made in Orlando, so there's that too. ;)

As for regular veggieburgers, I used to prefer the Boca over the Morningstar. Morningstar is better for crumbles.

Yep.
Probably in the "Greenwise" frozen section, though all Publixs are different so you never know.

I'm kinda curious about them not carrying Amy's burgers anymore. Amy's is really the "go-to" brand for all things "green". I'm really surprised.

Feelings on tofu? I'm just starting to experiment with it. I'm not vegetarian, but I have a very dear friend who is vegan, and we discuss food and eat together often. I know that he likes to prepare it like [livejournal.com profile] paragraphs suggested, cubed, fried and seasoned, often added to a stir fry. I believe he occasionally fries it in coconut oil or vegan margarine as well.
