Veggie Burgers
Jul. 3rd, 2011 09:21 pmMy Publix has stopped carrying Amy's Kitchen veggie burgers. I loved them: they were Vegan, nutritious and delicious. I could go back to my kosher veggie patties but they don't really have enough protein to them.
Does anyone have any suggestions for replacements? I would rather it be something else Publix would carry...

Date: 2011-07-04 03:33 pm (UTC)We use Boca primarily...we're lucky to have a wide variety here of vegetarian/vegan products to choose from. Don't have a Publix, but have you asked them to reconsider carrying your favs? Wal-Mart also carries Amy's products usually.
Tofu! I have a vegetarian daughter so I've learned to wield tofu in several different ways. My fav is to get the firm, and put it between plates with paper towels and put something on top to squeeeeze the living daylights out of it to get rid of all the water. You can then slice it and fry it up in olive oil--a long process, as it takes awhile but it is worth the patience (and now it doesn't seem to take long at all). Since it picks up the flavors of your sauces, experimenting with different sauces and veggies is fun. We do lots of stir-fry. I prefer the tofu in liquid to the shelf-ready boxed, hands down, and always have a tub of firm ready in the fridge.
Also...to alter the texture a bit, you can squeeze out the tofu and then freeze it, then rethaw it. That makes it denser.
Our newest favorite recipe is spinach lasagna, with silken tofu smooshed up with spinach as the ricotta. It is delicious (though I am not a fan of vegan cheese).
There are lots of good recipe sites out on the net. I have never made my own burgers because they are so available from Boca and Morning Star. (I do love the chik'n burgers lots--more than the veggie burgers).
Not a vegetarian, but semi-live as one. :)

Thanks so much for the help. I happen to love vegan cheese especially the shredded kind. Public used to have a salad that was just lettuce, tomatoes, peppers and soy shredded cheese.

Date: 2011-07-06 02:48 pm (UTC)And you can also make firm tofu firmer by pressing it. take it out and set it on a paper towel lined plate, then set another plate on top and something relatively heavy. Then just let it sit for a little while and tofu becomes even firmer! This might be good if you are looking to make veggie burgers with tofu.

Date: 2011-07-04 04:32 pm (UTC)They are Vegan. But also soy and wheat free. That is a big bonus for me as I had to give up my vegetarianism because I was beginning to develop a sensitivity to soy.
I prefer them crumbled, but they are pretty good as a burger. They're definitely not bland.
And I get mine at Publix.
And they're made in Orlando, so there's that too. ;)
As for regular veggieburgers, I used to prefer the Boca over the Morningstar. Morningstar is better for crumbles.

I'm kinda curious about them not carrying Amy's burgers anymore. Amy's is really the "go-to" brand for all things "green". I'm really surprised.
